No matter how large or small you make something in Illustrator it will always stay sharp since it is not upscaling or downscaling pixels, but instead doing math behind the scenes. To put it simply, everything inside Illustrator is built using mathematical calculations. In comparison Illustrator is vector-based. For example a 1,000px x 1,000px logo made in Photoshop will look good on a business card or for a profile picture, but would become awfully pixelated on a poster or any kind of large format when printed. This is because Photoshop is a "raster" program which means anything created in it is made up of pixels. Not to mention making edits to the logo would be difficult to say the least. With huge files come looooong loading times and waiting around for the logo to load on that business card in InDesign, or even just re-scaling it in Photoshop itself. While I guess you technically "can" do it in Photoshop, you are just giving yourself a whole bunch of extra work since the source file would have to be a huge resolution (and file size) in order to look good on all the different formats mentioned above.
